Breaking Fast with Overnight Oats
I am LATE to this overnight game! Now that I’m full swing on Tru Haus, I find myself scrambling to use every minute of each day. Mornings are not as relaxed as they used to be, I’ve had to pick and choose what is going to be apart of my morning routine. In order to maximize my day, that means cutting out breakfast. Not entirely (of course!), but the sit down, 3 course morning won’t be around M-F, (at least for now).
Overnight Oats are a quick 7 minute prep the night before for a grab on the go breakfast. I take them to the office with me the next morning, still ensuring a nutrient dense, whole-food, satisfying breakfast!
1/4 cup rolled oats
1/4 cup steel cup oats
1/2 cup nut milk (I use whatever I have, almond or cashew)
1 1/2 teaspoon chia seeds
1 tablespoon Crazy Richard’s Peanut Butter
1 teaspoon maple syrup
Spoonful frozen wild blueberries
1 tablespoon toasted coconut flakes
1 teaspoon goji berries
* I use ORGANIC, do the best you can with this. Have fun with your toppings, use what you have!*
Mash banana at the bottom of your jar.
Add oats, almond milk, chia seeds, maple syrup, peanut butter and mix.
Stir then cover and refrigerate overnight.
*Don't add toppings until the next day! Can stay refrigerated for up to 5 days.*
